Carrot and Pineapple Salad


Carrot and Pineapple Salad


Ingredients:


4 cups carrots, grated, or matchstick cut
2 cups pineapple tidbits or crushed pineapple
1/2 cup raisins
1/2 cup mayonnaise



Directions:

Combine ingredients. Cover and refrigerate for 30 minutes before serving.



Notes:  I believe Mom’s recipe was even simpler—just carrots and pineapple.  Some recipes call for honey, to sweeten.
